Homemade burger and fries

Today I made hamburgers, fries from the oven and mayonnaise. Of course you can buy all this from the cafeteria or from a fastfood restaurant but homemade tastes better and you control the dish and the ingredients yourself.

Fries from the oven:

Get some floury potatoes and cut them into slices. You can make it your own preferred size but smaller fries will be easier to bake. I washed the potatoes and left the skin on.

Put them in a bowl of water and let them rest for about 15 minutes. Then get them on a towel and dry the potato slices. They really shouldn’t have water on them when baking.

Add baking paper to a baking tray and distribute the fries over the tray. Then get some olive oil over it. Finish it with some sea salt and rosemary.

Bake them on 200 degrees celsius for about 40 minutes. After 20 minutes flip over the fries. Some ovens need 220 degrees or more than 40 minutes. Just check the oven regularly and get them out when they are done.

First I final baked some Italian bread. Then I applied a thin layer mayonnaise and put some cucumber and tomato slices on it. I made the fresh meat hamburgers in a frying pan and when they were nice and brown I got them on the bread. I topped them with a nice Cheese.

Get 2 egg yolks in a bowl. Add a teaspoon of mustard. Start to whip the ingredients. Then whilst whipping drop in oil (olive or arachide). When the ingredients bind you can go add more oil but do slowly. Add a tablespoon of white wine vinegar. Add a bit lemon juice to help bind the ingredients and oil. Keep oiling till it is a nice thick mixture. If too thick add a bit of lukewarm water to it. Make sure all ingredients are room temperature to avoid curdling.
