Let me be really honest with you guys.. I like cooking but I don’t like most vegetables. There are endless ways of preparing your meat or potatoes but most veggies are eaten raw or cooked/steamed.
Zucchini’s are quite cheap here and they are full of vitamins. They don’t really have a distinct taste which makes them usable for almost every dish.
What you will need for this recipe is:
- Zucchini’s (about 800 grams)
- 125 grams of Cashew nuts
- 50 grams of parmesan cheese (grated)
- 1 egg
Start with cleaning the zucchini’s. When this is done make long slices which are about 2 – 3 millimeters in thickness.
When you’ve sliced the zucchini’s you can start crushing the cashew nuts in small pieces. You can also add other nuts to this recipe or if you don’t like cashew nuts, use other nuts.
After the nuts are crushed, put them together with the grated parmesan cheese and the coriander and mix them up. Put them on a flat plate and make sure there is enough width to fit the zucchini slices on there.
Get the egg in a bowl and add a pinch of salt and then mix it up. When finished, take the slices of zucchini and get them through the egg. Then immediately put the slice on the plate with the nut and cheese and press it a bit. Turn over the zucchini slice so the two sides are covered in the mixture.
Get a frying pan and put in some oil. I used arachide oil but it will work in all oils i think. When the pan and oil are heated up, put the slices into the pan till they get a nice tanned crust.
You can serve these fried zucchini slices as a snack but you can also use them in combination with a dish. I served them with rice, veggies, mushrooms and sliced omelette.
